I've come to the conclusion that while Paul didn't contradict Jesus, he added some things and de-emphasized others. But the reason the letters are in scripture besides the gospels is because the interpretations of Paul and James and others of what happened ultimately shaped Christian doctrine more than what Jesus actually did or said.
